1 lb bittersweet chocolate or Chocolate Almond
80 buttery round crackers or Original Ritz crackers
1/2 tsp peppermint extract

Directions:
Using a double boiler method, melt the chocolate coatings over hot tap water for 15 - 20 minutes. Stir . Do not cook or get water into the chocolate. (Or you can use the microwave nuking at 30 second intervals and stirring after the initial 1 minute).

After it is melted, stir in 1/2 tsp of peppermint flavor into the chocolate. (Be sure chocolate is melted completely before adding extract).

Dip crackers into the melted chocolate and then place onto a cold cookie sheet. (A freezing tray to rest the dipped cookies will keep the bottoms neat looking.)

The cookies are best kept at room temperature or a cool dry place away from any odors.

Note: Two forks help in dipping the crackers into the chocolate.
