2 1/2 cups flour
1 t baking powder
1/2 t salt
1 1/4 cups brown sugar
1/2 cup oil
1 egg
1 cup buttermilk or sour milk or yoghurt
1 t vanilla
2 cups chopped rhubarb
Topping (optional):
1/2 cup brown sugar, 1 T melted butter, 1/2 cinnamon

Directions:
Directions:
1. Combine dry ingredients.
2. Whisk oil and sugar, mix in egg, milk and vanilla.
3. Mix these 2 mixtures together.
4. Add rhubarb and stir until just moistened.
5. Butter 18 muffin cups and fill 3/4 full.
6. Sprinkle on topping if using.
7. Bake in preheated oven at 350º for 20-25 minutes until tops are firm.
