Apple and Cranberry Crisp |

Ingredients: Filling: ½ cup sugar 3 tbsp. flour 1 tsp. lemon zest ¾ tsp. lemon juice 5 cups apples, unpeeled, sliced, cored 1 cup cranberries
Topping: ⅔ cup rolled oats ⅓ cup brown sugar, packed ¼ cup whole-wheat flour 2 tsp. cinnamon 1 tbsp. butter, melted

Directions:1. Preheat oven to 375º. Spray a 6 cup baking dish. 2. Prepare filling by combining sugar, flour and lemon zest in medium bowl. Mix well. 3. Add lemon juice, apples and cranberries. Stir to mix. Spoon into baking dish. 4. Prepare topping by combining oats, brown sugar, flour and cinnamon in small bowl. 5. Add butter. Stir to mix. Sprinkle topping over filling. 6. Bake 40-50 minutes until filling is bubbly and top is brown. 7. Serve warm or at room temperature. |

Ingredients: 4 apples, peeled, sliced ⅔ cup brown sugar, packed ½ cup flour ½ cup oats ⅓ cup butter, softened ¾ tsp. cinnamon ¾ tsp. nutmeg ½ cup chopped walnuts or pecans ½ cup raisins, optional

Directions:1. Preheat oven to 375º. Butter an 8x8 inch baking dish. 2. In medium bowl, mix sugar, flour, oats, spices and nuts with softened butter. Set aside. 3. Place prepared apples loosely in the prepared pan. Scatter raisins on top if desired. 4. Crumble the mixture evenly over the apples. 5. Bake 25-30 minutes, until apples are tender. 6. Serve warm or cool. |

Blueberry Crisp |

Ingredients: 4 cups fresh blueberries, washed ⅓ cup water 2 tsp. lemon juice 4 tbsp. butter, softened
⅓ cup sugar ⅓ cup wheat flour ¾ cup uncooked rolled oatmeal

Directions:1. Preheat oven to 375º. Place blueberries in 8x8 inch baking dish. 2. Pour in water and lemon juice and stir to mix well. 3. In a mixing bowl, cream the butter and sugar. 4. Combine the flour and oatmeal and add to the butter mixture. Mix until crumbly. 5. Sprinkle the oatmeal mixture over the blueberries and bake 40 minutes or until well browned. |

Notes: Firm and crisp apples such as Granny Smith and Honeycrisp are popular to use in apple crisps. If Gala are used the amount of sugar may be reduced. These are heartwarming recipes for the cold winter months in the Northeast. All three can be served with ice cream or whipped cream topping.
