8 cups low sodium Chicken Stock
4 Chicken thighs with skin on
4 Carrots peeled
1 Sweet Potato peeled
3 Other small Potatoes peeled
4 Stalks Celery
1 Sweet Onion
Half a package of Frozen Corn
1 Turnip (optional)
1-2 cups rotini pasta uncooked

Directions:
Directions:
Combine Chicken Stock and Thighs in crock pot and cook on medium for 2-3 hours. Take Chicken out, remove skin and chop up the chicken in bite size pieces, While Chicken is cooking, dice carrots, sweet potato, small potatoes, celery and turnip and cook for 15 minutes in olive oil in saute pan. Add these ingredients to the chicken stock and chicken and cook for 2 more hours on mediun. At two hours or when vegies are done, add the half bag of frozen corn and pasta. Cook another hour and your meal is ready. Salt and pepper to taste.
