3 cups flour
1 1/2 cups sugar
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking powder
4 teaspoon baking soda
2 cups shredded unpeeled zucchini
1 cup chopped nuts
1 cup raisins (optional)
3 eggs
1 cup cooking oil

Directions:
Directions:
Stir together flour, sugar, cinnamon, salt, baking powder, and baking soda, zucchini, nuts, and raisins.
In seperate bowl, beat eggs and oil. Pour over dry ingredients. Mix until moistened. Pour into greased 9 x 5 loaf pan. Bake 350 degrees for 1 1/2 hours or until pick inserted comes out clean. Cool in pan for 10 minutes. Let cool completely before serving.
