¼ cream of tartar
¾ cup sugar
½ tsp vanilla

Preheat oven to 275º. Cover cookie sheet with parchment paper.

Beat the egg whites and ¼ tsp of cream of tartar until foamy. Beat in vanilla and ¾ cup of sugar, one tablespoon at a time. Continue beating until stiff and glossy. Do not underbeat.

Drop meringue by ⅓ cupfuls onto parchment paper. Shape into circles with spoon and make a well in the middle. Bake one hour. Turn off oven; leave meringues in oven with door closed 1½ hours. Finish cooling meringues at room temperature.

These were served at Brookside and very very popular. We used whatever fruit was in season but strawberries were the most popular. When ready to serve, put a scoop of vanilla ice cream in the well that you created. Pour strawberries or fruit that has been cut into small pieces and mixed with sugar to your liking. Serve also if you like with a bit of whipped cream on top of the fruit. ONE OF MY FAVORITES!!
