Ingredients: 1 3/4 cup warm water 1 pkg active dry yeast (about 1.5 tbsp) 1 tbsp sugar 5 cups flour, plus extra for kneading 1 tbsp salt, plus extra for sprinkling 1 cup olive oil

Directions:1. Combine yeast, sugar, and warm water in a small bowl. Place in a warm place + let rest until the yeast is foamy and aromatic, about 15 minutes. 2. Combine flour, salt, 1/2 cup olive oil, and the yeast mixture in a large bowl. Mix until a smooth dough forms. 3. Cover with plastic wrap and let rise for 1 hour. 4. Coat a jelly roll pan (or any flat baking sheet with sides) with 1/4 cup olive oil. Gently press the risen dough evenly into the pan, then use your fingertips to poke rows of small holes or deep divets evenly over the surface. 5. Leave pan in warm place to let the dough rise for 1 more hour. Preheat your oven to 425º F. 6. Pour the rest of the olive oil evenly on top of the dough + sprinkle the top with salt. Bake for 25-30 min, or until the crust is a golden brown. |

Notes: The olive oil makes up the flavor of this bread, so be sure to use a good one! You can also add whatever you like to the dough, including herbs/aromatics like rosemary, garlic, oregano, or toppings like sundried tomatoes or mushrooms. Add these in the dough itself when mixing, or poke them in after it's risen for the first time.
