3 lengths of burdock
1 carrot
2 T butter
1½ T brown sugar
¼ t pepper
2 T soy sauce
1½ T mirin wine (available at Safeway or Asian store)

Directions:
Cut burdock and carrots into matchsticks. Soak burdock in water for 5 to 10 minutes. Drain and pat dry.

In large non-stick pan, melt butter over medium-high heat. Add burdock and cook until tender and browned. Add carrots and continue to cook until carrots are tender. Add brown sugar, soy sauce, and mirin. Let cook down until it reduces and caramelizes. Add pepper to taste. 

Great as a vegetable side or packed in lunches. Mirin and burdock are available in an Asian grocery store.
