Dough
1 teaspoon active dry yeast
1/4 cup warm water
1 cup cold water
1 teaspoon salt
3 cups flour

Sauce
1 can crushed tomatoes
salt, to taste
1 tablespoon garlic, minced
1 tablespoon sugar

Toppings
mozzarella
pepperoni

Directions:

Dough
1. Sprinkle yeast over warm water in large bowl or mixer and leave for 5 minutes
2. Stir in salt and cold water
3. Add flour one cup at a time
4. When dough is together enough to remove from bowl, knead on floured surface for about 10 minutes
5. Divide into two. Coat in olive oil and place in bowl covered with plastic wrap for at least 45 minutes
Sauce
6. On medium heat in a medium size pan mix together all ingredients and bring to a simmer. Make sure to taste and add what you think is needed. Let it simmer while dough is rising
Assembly
7. Preheat oven to 450º
8. Flour surface and stretch dough to fit pan
9. Add a thin layer of sauce and add your toppings
10. Bake for 12 minutes
