Ingredients:  
1 pound dry lentils, cooked in 2 1/2 quarts water, 30 minutes, until tender. (2 1/2 cups cooked lentils)
1 t dry mustard
1/4 t ground ginger
1/2 t black pepper
2 T soy sauce
1 cup chopped onion
6 slices bacon (optional)
1/2 cup honey

Directions:
Directions:
1. Cook lentils until tender.
2. Combine mustard, ginger, pepper, soy sauce in a 2 quart casserole.
3. Add onion and cooked lentils.
4. Cut bacon into 1 inch pieces. Stir half in, sprinkle the rest on top.
5. Pour honey over all.
6. Cover tightly, bake 1 hour at 300.
7. Uncover the last 5 minutes to brown bacon.

Vegetarian without bacon. Delicious variation of baked beans. Do not overcook lentils or they will be mushy.
If you serve it with brown rice it is a complete protein.
