Ingredients: 2 pounds uncooked great northern beans 3 tbsps olive oil or butter 1 large onion, diced 3 large carrots, diced 3 ribs celery, diced Ham hocks or diced ham Salt to taste Water or chicken broth
Red onion, chopped Balsamic Vinegar

Directions:Preheat oven to 350ºF.
Rinse and clean the dry beans, removing any that are discolored. Place the beans in a large stock pot and cover with water, at least two inches above beans. Turn off oven. Place beans in the oven overnight. This will allow them to swell quite a bit.
Next day, rinse, drain and clean the beans. Set aside in a large bowl.
Preheat oven to 325ºF.
In same large stock pot over medium heat, add the oil/butter. Add and sauté the vegetables until they are lightly browned. Add the beans and ham. Cover with chicken stock/water until mixture is well covered. Bring this to a boil and then place the stock pot, covered, in the oven.
Cook for several hours, checking to make sure the beans remain covered with liquid. When the beans are the desired doneness, remove from oven.
Serve with red onion and balsamic vinegar. |

Notes: This is one of my all time favorite dishes. I rank it in the top five. I frequently prepare extra beans, freeze them, and then use them in the many dishes I like that require white beans. Or I just thaw the frozen beans and have another delightful dinner.
