2 tbsp. Olive Oil
2-3 Medium-size Cucumbers, peeled, seeded and chopped
3 tbsp. sliced Green Onions (with tops)
1 1/4 Cup Milk
1 tsp. Chicken Bouillon Granules (or 1 cube)
3 tbsp. Whole Cilantro Leaves
1/2 Cup Plain Yogurt

Directions:
Directions:
Heat olive oil in a saucepan. Add onions and cook slightly.
Add cucumbers and cook until tender.
Add milk, bouillon and cilantro.
Simmer over medium heat for 5 minutes, stirring constantly.
Pour mixture into a blender and process until pureed.
Stir in yogurt and mix.
Cover and refrigerate for a t least 2 hours.
Garnish with cucumber slices and cilantro
