2 1/2 Cups sifted Cake Flour
1 1/2 Cup Sugar
3 tsp. Baking Powder
1 tsp. Salt
1/2 Cup Shortening
1 Cup Milk
2 Eggs
1 tsp. Vanilla

Icing:
2 Cups sugar
2 tbsp. Butter
1 tsp. Vanilla
1 Cup Milk
2 Bags of Frozen Coconut (1 for icing, 1 to sprinkle)

Directions:
Directions:
Place flour in sifter and sift in sugar, baking powder and salt.
Stir Shortening in bowl to soften and sift in dry ingredients.
Add 3/4 Cup Milk and beat for 2 minutes at Medium Speed
Add eggs, vanilla and rest of milk.
Beat an additional minute
Divide batter into two greased and slightly floured cake pans.
Bake at 350º for 25-30 minutes.
Use toothpick to test for doneness (comes out clean in middle of cake)

For Icing:
Combine all ingredients and boil until syrupy.
Pour over cooled cake.

Take 2nd bag of coconut and sprinkle over finished cake as much as desired.
