Directions:Prepare your meats and set aside to use when you start the assembly. Chop the steak into bite sided pieces after it rests. Chop all the peppers (no seeds if want it milder), onions, garlic and corn into a medium chop, not too small as this is a slow cooking chili. Start by adding meats to large heavy pot, and add rest of ingredients , stirring gently with each group. Save corn meal for later Last to add should be the beer. Go easy on salt and pepper at the first, can add more if it need it. Bring to boil over medium high heat and reduce to low, cook covered for 1 hour, uncover and stir, cook 1 more hour, uncover and taste for seasonings. Cover and cook an additional hour and in the last 15 minutes, add the corn meal to slightly thicken. Stir and adjust any seasoning. Serve in large bowls with any or all of the toppings. |
