Cherry Pie Filling
1 cup sugar
¼ cup flour
4½ cups pitted cherries
2 tbsp butter or margarine
½ tsp almond flavouring

Pie Crust Recipe
5 cups all-purpose flour
1 tsp salt
1 tbsp sugar
¼ tsp baking soda
1 lb lard (crisco)
1 egg
3 tbsp vinegar or lemon juice

Directions:

Cherry Pie Filling
Mix together sugar and flour. Combine with cherries and turn onto pastry-lined pie plate.
Dot with butter or margarine.
Sprinkle with almond flavouring.
Cover with top crust. Seal and flute edges and list or prick the top.

Pie Crust
Mix all ingredients together. Add lard and cut in with pastry blender until it resembles peas.
In a 2 cup measure, mix 1 egg, vinegar or lemon juice. Add water to bring to the 1 cup level.
Mix well and add to the flour/lard mixture.
Work together only until the mixture pulls away from the bowl and holds together.

Bake pie in preheated oven 425ºF for 15 minutes or until pastry is golden brown. Reduce heat to 350ºF and continue baking another 50 to 55 minutes or until filling has thickened.
