3 Skinless, boneless chicken breast halves (about 12 oz total)
1/4 tsp garlic salt
1/4 tsp ground black pepper
1 red onion cut in 1/2 inch slices
1 TBL olive oil
1/3 cup mayonaise
1 TBL course ground mustard
2 Baguette-style French Bread Loaves
9 slices crisp cooked bacon
8 slices cheddar cheese

1. Sprinkle chicken with garlic salt and pepper. Brush both sides onion slices with oil. Cook in a grill pan over medium heat for 12-15 minutes or until chicken is no longer pink (170 degrees) and onion is tender and lightly charred, turning once. Thinly slice chicken. Separate onion rings.

2. Mix mayonnaise and mustard. Half bread loaves horizontally and hollow out each half, leaving a 3/4 inch shell and spread with mayo mixture. Layer bottoms with chicken, onion, bacon and cheese. Press tops down firmly. Tightly wrap sandwiches in foil. If you like, chill up to 24 hours.

3. Bake wrapped sandwiches in a 350 degree oven for 10 minutes or until heated through. Cut each sandwich into four portions and secure with wooden toothpicks.

This is a personal favorite of our family. Double or triple if you have hungry grandchildren.
For ease, buy a rotisserie chicken (or two), much easier.
