3 cans (5 oz each) chunk white chicken (packed in water, drained)
1 cup prepared chunky salsa
10 6-inch tortillas (corn is preferred, but flour will work too)
Hot water
1 can (16 oz) refried beans
4 oz processed cheese (velveta), cut into small pieces (1 cup)
(optional: sour cream for garnish)

Heat oven 400º, Have a shallow 1½ quart baking dish ready. Gently toss chicken with salsa in a medium bowl. Soften corn tortillas in hot water according to package directions or heat in a buttered skillet briefly on each side to soften. Spread each tortilla with 3 tbsp. refried beans; top with a scan ¼ cup chicken mixture. Fold or roll and arrange slightly overlapping in ungreased baking dish. Top with cheese. Serve with sour cream. Bake 6-8 minutes until filling is hot and cheese melted. Makes 5 servings with 45 g. carbs each.
