4 chicken breasts
Canola oil

(Egg Wash)
4 eggs
1/4 c water

(Coating)
2 c whole wheat flour
1 tsp salt
4 tsp black pepper
3 Tbsp ground ginger
1 Tbsp ground nutmeg
2 tsp ground thyme
2 tsp dried sage
1 tsp cayenne pepper
2 Tbsp paprika

(Sauce)
2 Tbsp Olive oil
3 - 4 cloves minced garlic
1 c honey
1/4 c low sodium soy sauce
1 tsp ground black pepper

Directions:

Preheat oven to 425ºF
Move rack to second lowest level and place baking sheet in oven till chicken is ready

Whisk egg wash ingredients together in a shallow dish

Mix the coating ingredients together in a ziploc bag
Once completely combined, pour half into a second shallow dish

Place chicken between 2 pieces of plastic wrap or freezer paper
Use a meat mallet to pound the chicken down to approximately half inch
Lightly coat chicken with flour mixture
Dredge in egg wash
Coat in flour mixture, making sure completely covered
Set aside on parchment paper until all chicken has been coated
Once completed, carefully take baking sheet out of oven
Pour a small amount of canola oil to coat the bottom of the baking sheet
Place chicken on baking sheet, making sure there is room between each piece
Lightly spritz top of chicken with oil
Bake for 15 minutes without opening the oven
Take pan out and flip chicken over and place pan back in oven
Bake an additional 15 minutes without opening the oven

While chicken is cooking, make sauce
In a medium saucepan heat oil over medium heat
Add garlic to soften (do not brown)
Add honey, soy sauce and black pepper
Simmer for 5 - 10 minutes (be careful not to boil)
Let cool for a couple minutes

Once chicken is done, drizzle sauce on top
