Carleen Miller

2 lbs. flank steak
1 tsp. smoked paprika
1 tsp. cumin
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. oregano
2 T. olive oil
1/4 cup orange juice
1/4 cup lime juice (fresh squeezed)
1/4 cup lemon juice (fresh squeezed)
1/4 cup soy sauce
2 T. white vinegar

Whisk together spices then stir in oil.
Rub spice mixture on steak.
Whisk together the orange, lime, lemon juices, soy sauce and vinegar.
Grease a crock pot and pour in half of the juice mixture.
Place steak in crockpot and pour the rest of the juice over the top.
Cover and cook for 6 hrs.
Remove steak, slice thinly and mix with juices.

Serve with corn tortillas, pico de gallo, avacado

Pico de Gallo

5 Roma tomatoes, diced
1/4 yellow onion, diced
1/4 cup cilantro
1/2 jalapeno pepper, minced, seeded if you want it milder
2 T. fresh squeezed lime juice
1-2 cloves garlic, minced
salt to taste

In a medium bowl mix all ingredients together, cover and refrigerate. You can make this the day before to allow the flavors to blend but still good if you don't.

Personal Notes:
Personal Notes:
I have used this recipe in my Instant Pot and liked the result even more than the crockpot. Pressure cook on high for 6 minutes and allow the pressure to release on it's own, about 15 minutes.
