2 lbs. potatoes
2 eggs beaten
cup grated cheese
finely chopped parsley
breadcrumbs
olive oil

Directions:
Directions:
1. Peel potatoes and cook. When done mash well.
2. Add eggs, cheese and parsley to mashed potatoes. Mix well.
3. Roll into sausage-shaped rissoles, about 2 " long.
4. Coat with breadcrumbs and layer on a baking sheet. Refrigerate for one hour.
5. Heat oil in a skillet. Add the croquettes, a few at a time, and fry until golden brown.
6. Place croquettes on paper towel.
7. Serve as a side dish.

Grandpa likes to make this recipe which he found in an old Italian cookbook. They are delicious.
