1 package 20 grams of dried oyster or porcini mushroom soaking in 1 cup of water
1- 2 cups shiitake or Mini portobello mushrooms
1 small package entoki mushrooms or white button mushrooms
3/4 package of spaghetti or fettuccine
3 Tablespoons of Olive Oil
3 Tablespoons of unsalted butter
2 Tablespoons of white wine
1 garlic clove shredded
1/4 of chopped onion
Optional 1/4 cup of chopped guanciale
1 teaspoon dried chilli flakes
Salt and pepper to taste
Chopped parsley

Directions:
Add 1 cup of water to a 20 grams package of dried mushrooms and set aside
Add water to a pot to boil the pasta
In a skillet add olive oil and stir fry guanciale and onions until translucent and dried chilli flakes
Add grated garlic and stir fry slices of mushrooms with a wooden spoon not stainless steel
Gradually stir and add small bunches at a time
When mushrooms are somewhat brown add the liquid with the soaked mushrooms
Stirring add the butter
Meanwhile if water is boiling add salt to water and cook the pasta
While cooking pasta retain a cup of pasta starchy water on the side
Add the wine to mushrooms and simmer on low heat
Add parsley
When pasta cooked , drain pasta and add to skillet then add pasta water to mix all well while on very low heat. Let it blend together for one to two minutes. Add grated parmigiano or pecorino cheese.
Serve in the skillet enjoy.
