Ingredients: One 3-4 lb. bone standing prime rib roast, about 7 lbs. Lots of sea salt and freshly ground pepper
Garlic cloves (if wanted)

Directions:Place a roasting pan the lower third of the oven and preheat it to 450 degrees
Thoroughly dry the meat by patting it with paper towels. This will help it brown quickly by getting rid of any surface moitures. Rub the surface of the meat with lots of coarse sea salt and freshly ground black pepper.
Slice diagonally and insert 1-2 garlic cloves or ground garlice, if desired.
To sear the top surface, place the roast--rib side up--in a roasing pan and roast for 30 minutes. Flip the roast over and turn the oven down to 300 degrees. Continue roasting until an instant-read thermometer placed in the thickest part of the meat reads 135 to 140 degrees (about 3 hours) . This will give you a perfect medium-rare to medium roast. For medium, wait until the thermeter reads 150 degrees about 30 more minutes.
Remove the roast from the oven and rest it in a warm place loosely covered with several layers of foil for 15-20 minutes. It's stressed-out fibers will relax and re-absorb the juices that concentrate under great pressure in the center of the meat during roasting.
The internal temperature will slowly rise another 5-10 degrees. This is known as carryover cooking and is factored into the doneness judgement above. |
