9 C. flour
1/2 C. gluten
1/2 C. sugar
2 T. salt
3 T. saf yeast
1/4 C. powdered eggs
1 C. powdered milk or whey
4 T. lethicin
8 C. hot water
1/2 C. oil
7-9 more cups of flour

Knead by hand or in bread mixer 5 minutes. Let raise 15 minutes. Divide into loaves ( 6 large, or 10 small) Shape loaves and place in bread pan, let raise 15 min. then bake 350º for 20-30 minutes.

I use my Bosch mixer and put in ingredients in order listed. I will turn on the mixer and swirl it a few times as I add the dry ingredients. Once I add the water, oil, and flour - mix for the 5 minutes. Try to use to least amount of flour. Place in large greased bowl and cover with dish towel. When raised - punch down the dough getting the air out. Shape loaves and place in bread pans, let raise again. You can use 1/2 all purpose flour and 1/2 bread flour. But my preference is to use all bread flour. This is a family favorite...soooo yummy!!!
