Set Yeast (1tbsp) & 1 tsp sugar in 1 cup warm water
Scald 2 cups milk and add 6 tbsp. butter, 3 tbsp salt and 6 tbsp sugar.
Put 8 cups of flour in pan , add milk mixture and water (4-8 cups) then yeast mixture
Mix with enough flour for stiff dough.
Set 1 hr.
mix down & set another hour.
mix down and put in pans. Set 2 hrs.
I have also added 1 cup of mashed potatoes and the potato water and this makes a really nice moist bread.
Depending on the amount of liquid this can make quite a few loaves.

This is a very old recipe and I have used it for years. I remember Grandma and Edna baking bread in the old wood cook stove. What a wonderful smell walking into their house and smelling fresh baked bread. It amazed me how they could regulate the temperature of the wood stove and get such delicious bread. Most of the time Edna was the bread maker. She milked the cow, separated the cream in the cream separator, made butter. Looked after the chickens. Mom & Edna spent a lot of time together, she was like a second Mom. She was there before Mom was born, they did the outside work together.
Grandma Ayotte went and got Edna and packed her up and took her to live with them when Eileen was a baby. Mom slept in the blanket box and Edna slept with Willis on the couch.Grandpa Ayotte built on to the house to make more room and everyone had a bedroom. At harvest Grandma Ayotte drove the truck to haul the grain and Mom and Edna cooked the supper and milked the cow.
Mom made two batches of bread every week totaling 21 loaves and cinnamon buns. I remember having dough boys as a kid on bread making days.
