4 hard boiled eggs, chopped
¼ cup Dijon mustard
1 cup mayonnaise
½ cup chopped sweet pickle
Salt and pepper to taste
3 cups diced, cooked rotisserie chicken
Romaine lettuce leaves
Tomatoes
Whole grain crackers or bread

Chop hardboiled eggs. Combine Dijon mustard, mayonnaise, sweet pickle, salt and pepper. In a large bowl, combine chicken and eggs. Add mayonnaise mixture and stir well. Add extra mayonnaise if needed to moisten chicken.

Cover and chill for at least two hours. Arrange washed, dried romaine on a platter. Spoon salad onto lettuce. Serve with tomato slices and whole grain crackers or bread.
