1 package (22 oz.) frozen waffle fries
10 bacon strips, cooked and crumbled
3 green onions, sliced
1 can (6 oz.) sliced ripe olives, drained
2 medium tomatoes, seeded and chopped
⅔ c. salsa
1½ c. shredded Cheddar Cheese
1½ c. shredded Monterey Jack cheese
Sour cream

Customize with pulled pork (in place of bacon) and sliced jalapenos!

Bake fries according to package directions. Transfer to a 10 inch ovenproof skillet or long glass dish.
Top with the bacon, onions, olives, tomatoes, salsa and cheeses.
Return to the oven for 5 minutes or until cheese is melted. Serve with sour cream.

This was our effort to duplicate a Waffle Fry Nachos "experience" that Allan and Mike had in Las Vegas at KGB. I found this recipe in "100 Super Bowl Recipes You Haven't Tried Yet!" It's great to vary the toppings based on personal preference. The Waffle Fry Nachos at KBG included short rib meat and lots of jalapenos.
