½ cup sugar
½ cup confectioners' sugar
¼ cup sifted all-purpose flour
⅛ tsp. salt
½ lb. almond paste
pignoli nuts
2 - 3 large egg whites, to make ¼ cup.

Directions:
Directions:
Sift sugars with salt and flour. Set aside.
In medium bowl, break up almond paste into small pieces.
Add egg whites with electric mixer at medium speed. Beat until smooth.
With wooden spoon, stir in flour mixture and blend.
Using rounded teaspoonfuls, roll dough into balls about 1 inch in diameter.
Grease 2 baking sheets.
Place the dough balls 2 inches apart. Then press the top of each into 1 - 1½-inch rounds.
Bake in oven at 300º for 20 - 25 minutes, until golden.
Remove from baking sheet and place on wire rack to cool.
Store in airtight container.
