¾ to 1 lb. white fish (haddock, cod, pollock)
½ tsp. salt
¼ tsp. pepper
1 tsp. garlic powder
3 Tbsp. fresh parsley, chopped
1 medium green pepper, sliced
1 stalk celery, sliced thin
1 medium onion, chopped or sliced
1 can whole tomatoes
1 Tbsp. butter [optional]

Directions:
Directions:
Preheat oven to 350º.
Place fish in casserole dish and season with salt, pepper, and garlic powder.
Sprinkle fish with fresh parsley.
Place onions and green peppers on top and around fish.
Top the fish and vegetables with the canned tomatoes and add liquid, if needed.
If the fish is dry (possibly from being frozen and thawed), add butter to top.
Bake until fish is done, about 30 minutes.
