One 9-inch coconut crust (see below)
1 (8 oz) pkg. cream cheese
1 can Eagle Brand sweetened condensed milk
1 can pineapple-orange juice frozen concentrate, thawed
1 (8 oz.) can crushed pineapple, well drained
3 Tbsp. light rum (or substitute rum flavor extract)
1 Tbsp. Orange extract
1 c. (½ pint) heavy whipping cream, whipped

Prepare coconut crust (recipe below) first. Then beat cheese. Add milk, juice concentrate and stir in pineapple. Fold in cream. Pour over crust. Chill 4 hours.
 

Coconut Crust


Ingredients:

1/4 c. butter
2 cans flaked coconut (3.5 oz. each)
1 1/2 c. finely ground graham cracker crumbs
1/3 c. sugar

Directions:
Directions:
Combine crust ingredients and press into 9" pie pan. Preheat oven 350 degrees. Bake 15 minutes. Let cool.
