Nonstick cooking spray
4 slices whole-grain bread
1 lb. bulk sausage, browned and drained
6 eggs, large
2 c. milk
1 T. yellow mustard
1/2 t. salt
1/4 t. ground black pepper
4 oz. (or 1 c.) Cabot Seriously Sharp Cheddar Cheese
Maple syrup for serving, if desired

Preheat oven to 350º. Coat 8x10 in. or similar sized baking dish with nonstick cooking spray.

Tear bread into small pieces and scatter over bottom of dish. Top with sausage.

Whisk eggs in a medium bowl until combined, whisk in milk, mustard, salt and pepper. Pour over bread and sausage. Sprinkle cheese over top.

Bake uncovered for 35-45 minutes or until set all the way to the center (knife inserted in center comes out clean).

Serve warm drizzled with maple syrup if desired.
