3 large white potatoes, thinly sliced (I used a mandolin)
2 sweet potatoes, thinly sliced
1/2 white onion, thinly sliced
3 tbsp olive oil
1 tbsp organic coconut oil
3 tbsp cornstarch or 6 tbsp tapioca starch
2 cups chicken bone broth
2 tbsp mayonnaise (I used garlic mayo)
3/4 tsp sea salt
1/4 tsp freshly cracked black pepper

Directions:
Preheat oven to 325 F
Grease baking dish with coconut oil
Layer the potatoes, 1 layer of white potato, sprinkle onion, 1 layer of sweet potato, sprinkle onion
Alternate layers until potato and onion is finished
Heat the olive oil in a saucepan over medium heat, add the cornstarch/tapioca starch and mix until smooth
Add the broth, mayonnaise, salt & black pepper
Cook until thick
Pour over the potatoes, sprinkle the basil
Cover with foil and bake for 1 1/2 hours or until potatoes are soft.
Remove from oven and let sit for 10 minutes
