2 C firmly packed Brown Sugar
1 C Land'O Lakes Butter (unsalted).
3/4 C Light Corn Syrup
1 (14-oz) can Sweetened Condensed Milk
2 tsp Vanilla Extract


TOPPING

1 C Dark Chocolate Baking Chips
1/4 C Land'O Lakes Heavy Whipping Cream
1 tsp Sea Salt (Malden's).

FOR CARAMEL:

1. Line a 9-inch square pan with aluminum foil, extending over edges.

2. Butter bottom and sides of foil.

3. Combine brown sugar, butter, corn syrup and sweetened condensed milk in heavy 3-quart saucepan.

4. Cook over medium heat, 6-8 mins, stirring occasionally, until mixture comes to a boil.

5. Cook 20-25 mins, stirring occasionally, until candy thermometer registers 240-242F or small amount of mixture dropped into cold water forms soft pliable ball.

6. Remove from heat; stir in vanilla. Pour into prepared pan. Cool 2-hours at room temperature until set.


FOR TOPPING:

1. Combine chocolate chips and whipping cream in bowl. Microwave 1-2 mins, stirring evey 15-seconds, until chocolate is melted.

2. Spread mixture evenly over caramels. Cool 5-mins; sprinkle with sea salt.

3. Refrigerate until completely cooled.

4. Remove caramels from pan using foil along side of pan. Cut into 1-inch squares with sharp knife.

5. Wrap caramels in candy wrappers or waxed paper. Store refrigerated. Remove from frig 10-mins before serving.
