Zucchini Bread Recipe

1 c. granulated sugar
1 c. packed brown sugar
3 large eggs
1 c. vegetable oil
1 Tbsp vanilla extract
2 c. grated zucchini (from about 2 medium zucchini)
3 c. all-purpose flour
1 tsp kosher salt
1 1/2 tsp baking powder
1 tsp baking soda
3/4 tsp ground cinnamon
Softened butter and honey, for serving

1. Preheat the oven to 325ºF Spray two 81/2 x 41/2" loaf pans with baking spray
2. In a medium bowl, combine the granulated sugar, brown sugar, eggs, and oil
3. And stir vigorously until the mixture is very smooth
4. Add the vanilla and stir.
5. Place the zucchini in a couple of paper towels, then form a ball and squeeze out some of the excess water.
6. Add it to the bowl and stir it in.
7. In a large bowl, combine the flour, salt, baking powder, baking soda, and cinnamon and stir to combine.
8. Pour in the zucchini mixture
9. And slowly fold until the mixture just comes together.
10. Divide the batter between the two prepared loaf pans and place them in the center of the oven. Bake for 50 minutes, or until the tops are set and firm.
11. Let the bread cool in the pans for 5 minutes...
12. Then remove it from the pan carefully
13. Wrap a tea towel around the bottom half; it's hot!
14. Then slice away and marvel at the beautiful golden color and the bright green flecks of zucchini
15. Serve with a pat of butter and a little honey.
