1 tbsp canola oil
1½ cups of chopped onions
2 (4 oz) chopped green chilies
1 tsp fried oregano
1 tsp ground cumin
⅛ tsp cayenne pepper
4 (15 oz) cans great northern beans, rinsed
4 cups reduced sodium vegetable broth
2 tbsp cider vinegar

1. Heat oil in a large pot or Dutch oven over medium high heat
2. Add onion, cook stirring occasionally until softened about 5 minutes
3. Stir in chilies, oregano, cumin, can cayenne – cook stirring occasionally for about 5 minutes
4. Stir in bean and broth – bring to a simmer – cook stirring occasionally for about 20 min – add vinegar and cook for 5 minutes more.

If not using for Lent you can use chicken broth and add 4 cups diced cooked skinless turkey or chicken and the use on 3 cans of beans.
