Ingredients: 1 loaf of the very best quality sourdough bread you can find. This is the critical ingredient 8 tablespoons of salted butter 8 large cloves of fresh garlic, or to taste 1/4 cup of fine grated parmesan cheese Fresh or dried parsley, basil or oregano to taste

Directions:Preheat oven broiler
Melt butter in an 8" fry pan over very low heat Turn heat off but leave pan on burner Peel and smash garlic into the pan and leave to steep while preparing bread
Slice bread into 3" segments, then slice each piece in half
Line a large baking sheet with aluminum foil or a silicon pad
Dip each slice of bread into the butter/garlic mixture being sure to get some garlic solids on each piece and arrange on baking sheet butter side up
distribute any remaining garlic solids from pan among the slices top each slice with a small pinch of parmesan, spread evenly and a very light dusting of herb, if desired
Toast in a preheated oven broiler for a few minutes until the bread has browned lightly. Watch bread closely and remove slices are they brown, some will be done sooner than others.
Serve in a covered bread bowl immediately
