Lime Blueberry Muffins Recipe

1 3/4 cups Flour
1 cup Sugar
2 tsp Baking Powder
1/4 tsp Salt
1/2 cup Light Sour Cream
1/3 cup Canola Oil
1 tsp Grated Lime Rind
2 Tbsp Lime Juice
1 tsp Vanilla Extract
2 Egg Whites
1 Egg
6 oz Plain low-fat yogurt
1 cup Blueberries

Preheat oven to 350

Combine Flour and next three ingredients in bowl.

Combine sour cream and next seven ingredients in a bowl, stir with a whisk.

Add wet ingredients to dry ingredients, mix in blueberries, divide in muffin tin.

Bake muffins for about 25 minutes. Let cool for ten minutes in the pan before removing muffins.

These muffins are relatively health conscious and the lime goes really well with the blueberry!
