2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs, separated
2 tablespoons sugar
1/2 teaspoon vanilla extract
4 tablespoons butter, melted
2 cups milk

Non-stick cooking spray

Directions:
Directions:
Preheat waffle iron according to manufacturer's instructions. In medium bowl sift together flour, baking powder and salt. Set aside. In a second bowl use a wooden spoon to beat egg yolks and sugar until sugar is completely dissolved. Add vanilla extract, melted butter and milk to the eggs and whisk to combine, Combine the egg/milk mixture with the flour mixture and whisk just until blended. Do not over mix. In third bowl, beat the egg whites with an electric mixer until soft peaks form. Using a rubber spatula, gently fold the egg whites into the waffle batter. Do not over mix! Spray the waffle iron with non-stick cooking spray and pour enough batter in waffle iron to just cover waffle grid. Drop blueberries on waffle batter before closing lid. Close and cook per manufacturer's instruction until golden brown.

I double the recipe.
I put all waffles on a cookie sheet and put in freezer until frozen. Remove from freezer and place in zip-lock bags and return to freezer.
