8 cups water
2 lbs pork hocks
3 cups split peas
1½-2 cups chopped celery
1¼-1½ cups chopped onions
2 tsp salt
¼ tsp pepper
Fresh thyme sprigs or ½ tsp dried thyme
optional - add a bay leaf and some parsley

Directions:
Directions:
Cook pork hocks in water for an hour. Add all other ingredients and cook for 1 to 1½ hours stirring throughout to avoid sticking to bottom.
