¾ cup coconut oil
¾ cup almond flour
1 Tbsp turmeric powder
1 tsp salt
1 lb boneless, skinless chicken breast, cut into strips
*can substitute organic tempeh cut into strips for a plant-based option; be sure to steam tempeh for 10 minutes first though

Directions:

Add oil to large pan on medium-high heat.

Mix the almond flour, turmeric, salt, and pepper to taste in a bowl or plate.

Wet chicken/tempeh with water (I personally skip this step without issue, but you could totally use a beaten egg too) then dip them in almond flour mixture until well coated.

Drop the tenders into the hot pan, and cook for 4 minutes on each side until golden brown and cooked through.
