1 stick butter
1 c. Swerve brown sugar (or other sugar substitute)
1 c. Natural Peanut Butter (no salt or sugar added)
4 eggs
1 tsp. vanilla
1 tsp. salt
2 tsp. baking powder
3 c. Almond flour
1 tsp. Xanthan gum
* Use Raw sugar or Stevia blend sweetener to put criss-cross pattern on cookies.

Directions:

Soften butter and cream together with sugar. Add peanut butter and mix until smooth. Add eggs and vanilla. Mix in salt, baking powder and xanthan gum. Add flour and mix together. Put dough in refrigerator and chill for 3-4 hours or overnight.
Roll chilled dough into balls. Sprinkle each ball with sugar blend and use a fork to press criss-cross pattern into each cookie. Bake at 350 degrees for 10-15 min. or until slightly browned. Can freeze and eat out of freezer if desired!
