3 large egg whites room temperature
1/2 teaspoon cream of tartar
⅛ teaspoon salt
3/4 cup vanilla granulated sugar
1 teaspoon grated lemon rind

Directions:
Directions:
Whip eggs till form peaks. Slowly add sugar 1 TBS. at a time. Then add lemon rind. Keep blending. Done when rub between thumb & forefinger and it is smooth. On parchment use tsp. to drop a round shape, pull up to form peak.
Bake 200 degrees for 1 hour and a half hours. I make these with the 3 eggs whites left from my cheesecake.
