1 large fryer or 6 chicken breasts
1 large onion, chopped
1 bell pepper, chopped
1 large bag of doritos
stock from chicken
½ lb cheddar cheese, grated
1½ tsp chili powder
garlic salt to taste
1 can cream of chicken soup
1 can cream of mushroom soup
1 10oz can rotel tomatoes with green chilies, chopped

Boil chicken, debone and cut in small pieces. Reserve stock. Butter a 3½ qt casserole dish. Combine chicken, onion and bell pepper in mixing bowl. Layer chicken mixture alternately with Doritos that have been dipped in hot chicken stock just long enough to soften. Make three or four layers of each. Top with grated cheese, sprinkle with chili powder and garlic salt. Seperately, mix cream of chicken soup with ½ cup chicken stock and pour over casserole. Repeat with cream of mushroom soup, top with rotel tomatoes. Do not stir. Bake at 350º for 35 to 45 minutes. Serve hot with tostadoes.
