Ingredients:  
4 cups butternut squash, peeled and cut in cubes (remove and discard seeds)
¾ cup onion, diced
2 cloves garlic, minced
1 tbsp organic coconut oil
½ tsp sea salt
¼ tsp freshly cracked black pepper
1 ½ tbsp pure honey
½ cup hot water or vegetable broth

Directions:
Directions:
Heat coconut oil on high in a large saucepan or wok, add garlic and onion, cook for 1 minute.
Add squash, salt, black pepper and honey. Mix well
Add ½ cup hot water or vegetable broth, lower heat to medium, cover and let cook for 8 minutes or until the squash is soft.
Remove from heat and mash with potato masher.
Add salt if needed.
