Cuban Sandwich Recipe

FOR EACH SANDWICH
9" piece of Cuban bread
4 oz smoked ham, thinly sliced
1 1/2 ounces pork, thinly sliced
1 ounce Genoa salami. thinly sliced
1 ounce Swiss cheese, thinly sliced
2 dill pickle chips
1 tbsp yellow mustard
Soft butter

MARINADE FOR PORK TENDERLOIN
Salt
1 cup orange juice
1 tsp oregano
1 tsp cumin
1 bay leaf
10 cloves of garlic - chopped
Pepper

Directions:
Directions:
Poke tenderloin with fork or knife and rub with salt. Mix rest of ingredients in zip lock bag then add the tenderloin. It is best marinated overnight but I have done as few as 4 hour and it was still good.
Put tenderloin along with marinade in pan and cook at 325 or 45 minutes basting with marinade every 15 minutes.

Cut bread in half lengthwise. Layer sliced meats and cheese in the following order: ham. pork, salami and then cheese. Place pickles evenly on top. Spread mustard on top half of bread. Lightly butter both top and bottom of sandwich. Heat sandwich in press until crisp.

Relax son you don't have to use mustard or have pickles but I know you like making this for others so included them in the recipe.
