2 cups brown sugar
½ cup cold water
1 egg white
½ to 1 cup chopped nuts pecans or walnuts

In a heavy pan over very low heat mix sugar and water – stir until dissolved – turn to high heat and cook until your candy thermometer reads 354 degrees - Beat egg white until stiff peaks form – pour sugar mixture slowly over egg whites and continue beating until thick and creamy – add nuts and mix well – drop by teaspoon full onto waxed paper then store in an air-tight container
