3 lbs. lean ground beef(15-20%)
1 large green pepper, finely diced
1 medium onion, finely diced
3 eggs
2½ cups catsup, reserve 1½ cups
2 cups dry oatmeal(quick)
2 tsp. granulated garlic
1 tsp. black pepper
1 tsp. onion powder
½ cup brown sugar

While making meatloaf in small saucepan cook 1½ cups ketchup and brown sugar until sugar is dissolved on med-low heat. In 3 quart baking dish, sprayed with non-stick spray, mix together rest of ingredients. Mix well. Shape to fit baking dish. Pour brown sugar sauce evenly over top of meatloaf. Bake at 350º for 1 hour uncovered. Drain grease if needed. Let stand for 5 minutes and slice. Makes 8 to 12 servings.
