2 Cans Cream of Chicken Soup
¾ Cup Mayonnaise
2 Tablespoons Lemon Juice
1 Cup Milk
2 Cans Cooked Chicken (aka Costco chicken) Drained and Cubed
1 Small Sweet Onion Diced
1 Cup Diced Bell Peppers, Red, Green, Orange, etc
1 Cup Shredded Sharp Cheddar Cheese
1 Cup Shredded Colby-Jack Cheese
12 Ounces Egg Noodles, Cooked and Drained

1. Preheat oven to 350ºF. Grease 13x9 baking dish.
2. Combine soup, mayonnaise, lemon juice and milk in a large bowl.
3. Stir in chicken, onion, peppers and most of the cheese.
4. Gently fold in cooked egg noodles until combined.
5. Transfer to greased baking dish.
6. Bake uncovered for 35-40 minutes until center is bubbly.
7. Place remaining cheese on top. Bake for an additional 10-15 minutes until cheese is melted and golden.

Use Cream of Chicken Soup with Herbs or Mushrooms for an additional flavor enhancement. Salt should be avoided (cheese and soup has plenty) but black or red pepper can be added. This casserole freezes well unbaked (let thaw for 30 minutes before popping into oven). Leftovers reheat well too.
