Ingredients: ¾ cup butter, softened ½ cup sugar ¼ tsp. almond extract 1¾ cups flour ½ cup pecans or walnuts, finely chopped ¼ tsp. salt 1 (8 oz.) jar raspberry preserves* ½ - ¾ cup coconut

Directions:1. Preheat oven to 350º. Use ungreased 9x13 inch or 8x12 inch glass baking dish. 2. In a mixing bowl beat the butter, sugar and almond extract until combined. 3. Add flour, nuts and salt. Beat slowly until mixture resembles coarse crumbs. 4. Reserve 1 cup of the mixture. Press remaining mixture into bottom of pan. 5. Spread the preserves evenly over crust. 6. Crumble the reserved mixture over preserves. Sprinkle with coconut. 7. Bake for 25-30 minutes until crust and top are golden. 8. Cool in baking dish on wire rack. Cut into bars or squares to serve. |

Raspberry Oatmeal Bars |

Ingredients: 1 cup + 1 tbsp. flour ¾ cup old-fashioned rolled oats* ⅓ cup sugar ¼ cup light brown sugar, packed ¼ tsp. salt
½ cup unsalted butter, melted 1 tsp. vanilla extract 1 cup raspberry jam
*Do not use quick cook oats

Directions:1. Preheat oven to 350º. Line an 8x8 inch square baking dish with aluminum foil and spray foil with cooking spray. 2. In a large bowl, combine flour, oats, sugars and salt. Whisk until combined. 3. Pour in the melted butter and vanilla. Stir until the dry ingredients are moistened. 4. Set aside 1 cup of the crumble mixture. 5. Press remaining mixture in prepared pan. 6. Evenly spread the jam over the crust. 7. Sprinkle the reserved topping mixture evenly over the jam. 8. Bake for 30 minutes until jam is bubbly and the crumb topping is golden brown. 9. Cool in baking dish on wire rack for 2 hours before cutting and serving. |

Notes: The Raspberry Squares have been a traditional part of our Christmas collection for many years especially for coconut lovers. The Raspberry Oatmeal Bars is similar using oatmeal with a simple jam layer between the two layers of oatmeal crumble. Both are scrumptious.
