1 ½ lbs ground chuck
2 -3 large onions (chopped)
3 cloves garlic, pressed
2 -3 tbsp chili powder
1½ tsp dried oregano
1 tsp dried basil
¼ tsp crushed red pepper
2 tsp ground cumin
1-2 tbsp brown sugar
1-2 tsp salt
Green pepper
Dash Tabasco
2 (1 lb cans) tomatoes undrained
2 (8 oz cans) tomato sauce
1 (6 oz can) tomato paste
3 (1 lb cans) kidney beans (drained)
NOT IN CHILI
4 cups of rice
1 cup chopped onions
1 cup grated cheese
Sour cream

Use a 6 quart dutch oven over medium heat. Sauté beef, stirring occasionally until brown – keep in small chunks – pour off fat – add chopped onions, garlic, chili powder, oregano, basil, crushed red pepper, and cumin – mix well – cook stirring until onions are tender (about 5 min) – Stir in sugar, salt, tomatoes, tomato sauce, and tomato paste; mix well – bring to a boiling, breaking up tomatoes with a fork – simmer slowly, covered, stir occasionally until thickened (about 40 min) add kidney beans, simmer covered for 10 minutes. Serve over rice, and top with onions, grated cheese, and sour cream.
