Grandma's Chicken and Dumplings Recipe

Boil 1 medium sized chicken until done. I add an onion, a clove of garlic, and a stick of celery if I have it and 1 t. salt. You can also use chicken parts that are on sale in the store. It should be enough of them to make your broth have flavor. Let it cool and take from the bones and cut up as much chicken as you want to fix with dumplings. You can serve the rest cold with the dumplings if you wish or keep for sandwiches or salads. If the broth has a lot of fat on it, let it cool in the fridge overnight and skim some of it off so it won't be too rich. Add the cut up chicken to the broth. Taste to see if there is enough salt, and add some pepper. If it tastes a little weak, as you need a lot of broth, add a couple of chicken bouillon cubes. Put in a big kettle that has a good lid and add enough water to cook the dumplings in .
DUMPLINGS:
3 c. Flour
3 T. Crisco
4 1/2 t. Baking Powder
1 t. Salt
1 Egg slightly beaten
Enough milk to make a stiff dough. I sometimes add about 1/3 c. cooled chicken broth before I add the milk. Mix the fat in with the flour, baking powder, and salt. Add milk and mix in until you have a stiff dough, do not over mix. If you use an egg, add it with some of the milk and stir in lightly, then add the rest of the milk. Let dough stand a few minutes before using. Drop by spoonful's into the boiling chicken and broth. Be sure you have broth and it has enough seasoning. If you dip the spoon in the broth before you dip it in the dough it will slide off better. When you have the dumplings all dropped in the broth, (don't over crowed them) put a lid on the pan and let cook on a slow boil for 12 minutes before you take the lid off. If you have dough left over, take the cooked dumplings out of the broth and put them in a bowl, then drop the rest of the dough in (add water if you need to) and cook as before. When those are done, put the first dumplings back in the kettle (be sure there is enough broth) and serve hot. To keep them hot if you are not read to serve, put the lid on the kettle and put them in the oven at about 225º.
